Fried Onion and Bacon

My dad rarely cooked when I was growing up, but I remember once when I was little he made me breakfast one day when my mother was out of town.  He served this onion and bacon fried rice thing.  It smelled weird (I had never had bacon before).

He sold it to me as something he called ‘military breakfast.’  ?

Yeah. I remember shoveling it into my mouth and hoping that mom would come home soon.


This recipe has stayed in the family over the years.  We love it so much it’s found its way into a growing number of dishes – in cabbage rolls, stuffed in baked bell peppers, in omelets, and over pasta shells (which, according to Mom, was the original recipe).

ONION AND BACON FILLING

Ingredients:

Vegetable oil

1/2 cup white onions

1/2 package bacon

Sticky rice

Cooking Directions:

Fine chop the onions.  Cut bacon into 1/2 inch pieces.

In a medium skillet, fry the onions in vegetable oil until golden brown brown.  then, add bacon.

Turn off heat when bacon just begins to crisp.  Combine with steamed rice to create a filling.  Or, simply serve over rice or pasta shells.
